Cerro Azul (Peru)

At the evening, after a day of the vertiginous trip we arrive to a beach south of Lima. San Vicente del Cañete first and then nearby Cerro Azul. The fog that envelopes the beaches, the beating of the waves that turns over and over the pebbles with the snore of a sleeping beast is the best cure for the one's hurt conscience that this trip is finishing. We keep all this in spite of the tempting offer of other remedies in the market.

THE DRY SOUP WITH A SECRET "DON SATU"

Ingredients:

  • 4 chunks of a chicken
  • 1 kilo of noodles
  • Ground garlic
  • Onion
  • Tomato
  • Red ground peruvian chili
  • Cummin and pepper
  • Ground peanut
  • Raisins
  • Mushrooms with laurel
  • Olives
  • and the secret - grated quince, a very personal Celestina's touch.

  • Important! - the cooking point can be checked by throwing a noodle against the wall. If it sticks to, it is ready.
